Quinoa Salad

Quinoa salad.

Cook quinoa according to directions. I always double. 2 cups.

1 English cucumber
2 Peppers
1 Red onion diced
Feta (sprinkle amount you want)
Garbanzo beans
Salt to taste

Dressing:
1/4 cup Avocado oil/olive oil
1/4 lemon juice
1 TBSP red wine vinegar
1/4 tsp minced garlic

Mix and serve.
