Chicken Fried Rice


Such a great clean healthy recipe!!!! This is on rotation every two weeks in this house!

Chicken Fried Rice
(serves 4, I double this)
2 Tbsp Sesame Oil
1 Tbsp Coconut Oil
1 Cup Carrots, chopped
Rotisserie chicken (any form of chicken)
1 Cup Frozen peas
4 Garlic Cloves, minced
2 tsp Ginger, peeled and grated (dried works too)
1 1/2 Cups Dry Brown Rice
3 Cups Water
2 Eggs, lightly beaten
2 Tbsp Braggs Liquid Aminos
1/4 tsp Pepper

- Cook rice per package directions. Set aside.
- Heat a large nonstick skillet over medium-high heat. Add sesame and coconut oil, swirl to coat.
- Add carrots and stir-fry for 3 minutes or until crisp-tender.
- Add chicken, peas, garlic and ginger; stir-fry 2 more minutes
- Add rice, cook 3 minutes or until thoroughly heated, stirring occasionally. Reduce heat to medium. Push rice mixture to one side of the pan; add eggs to opposite side of the pan. Cook, without stirring, for 10 seconds. Cook, stirring frequently, 2 additional minutes or until eggs are scrambled. Stir in liquid aminos and pepper.
